Made at Home: Inspired Meals


Since joining the blogosphere a few months ago, Mike and I have found ourselves spending more and more time checking out other people’s blogs and websites. One of our favourite things to do is look up foodie blogs for recipes and meal ideas. Although we don’t always follow directions, the end result is usually a success.

The first meal above is a breakfast sandwich inspired by the McGriddle and this recipe, though obviously it turned out very different. We used two waffles, scrambled eggs, bacon, cheese, and maple syrup to put together this dish. The result was a bit too big to be eaten as a sandwich but the combination was perfect eaten with a knife and fork.

The second is a quinoa fajita salad, inspired by this. To make it even heartier we added corn, black beans, and a little shredded cheddar. We also served it with a dollop of salsa and greek yogurt on top. A delicious and filling way to get your veggies.
